Crunchy Lettuce Pesto


Feeling peckish but don’t want to be too unhealthy? Eat your heart out without having to worry about being too unhealthy. You’ll find yourself enjoying the savoury Lettuce Pesto served alongside some tortilla chips.

3 cups of Just crunchy lettuce

30g parmesan cheese

⅓ cup pine nuts 

⅛ cup olive oil 

3 garlic cloves

2 tbsp melted butter

Salt & pepper to taste



  1. Add all the ingredients to a food processor and blend on the low settings until desired consistency is achieved. Scrape down the sides of the food processor to ensure that the mixture is well combined. 
  2. Serve chilled with crackers.
